Perhaps Jenny Lake or even a backpacking trip into the Indian Lake area? I'd also consider south of Lincoln City, Oregon but would be worried about cloud cover being right on the coast. Even at greatest eclipse totality is only 2 mins 40 secs, somewhere in Kentucky and as little as 1 min 40 sec at the Oregon coast.
