I had an STV that I used with my Orion ST-80 for framing images (i.e. digital finder). It worked very well for displaying DSO's "better" than what you could see through the eyepiece of my 10 LX200. I sold that to finance a ST-7 to ST-8 upgrade, so I purchased a used Meade DSI. I've only had a couple chances to work with it - it seems to work very well for my purpose of framing images. It should work quite well for displaying the DSO's for your kids. It has a "live" image capability and also provides for image stacking. The only other truly live option might be some sort of light intensifier but they get pretty pricey and the images tend to be less than great.
I can certainly agree with Patrick on the light intensifiers. Everything is green and there's no contrast at all.
