I tried a few and my favorite by far is the same software wikipedia uses. It's already installed.. Everyone feel free to register. I might wipe the DB before it's complete but I might not... so have a go anyway, edit some pages, create some, have fun.
You do have to register to make changes, just so no spammers get ahold if it.
