The sun moves at about 15-degrees per hour, and sunset on the tenth will be pretty close to 9 pm, so without looking at a planetarium program, I'd say the sun will be no more than 15 to 20 degrees from the horizon at 8 pm, less than half the altitude of Polaris from SLC.
