My solution has been to use small plywood "washers" and T-nuts. The plywood washers are to spread out the load, same as a fender washer, and to give the t-nut something to bite into besides the cabin top. I confess that I've only used this on wooden boats, but it works. Who wants to scrape their skull on a protruding nut, anyhow? 1"x1"x 1/4" makes a nice washer. I use a cheapo Black & Decker belt sander to clean them up. It has an attachment that allows it to be clamped to a workbench upside down for such things.
