I have read that Dow 795 is the choice for bedding acrylics. Is that the same as plexiglas? I have been thinking of doing that same modification and adding a smaller window forward of the existing on each side. Perhaps carry the upper and lower window opening lines forward to the other side of the chain plates just to get some more light into the v-berth area. I replaced the windows on my 78 Montgomery using plexiglass. It is a challenge but you can remove the present window frames and insert the new glass calk and rebed the windows. A challenging but fun job.
