Black Co wouldn't be the only Cook world to make a great cable series: Garret, Dread, Instrumentalities...before the hurried ending..., Dragon, and Tower of Fear would make me tune in.

In answer to your question: Peter Jackson is the obvious choice, but Christopher Nolan, JJ Abrams, and Aaron Sorkin come to mind too, even if they haven't all dabbled in fantasy directly.  William Goldman.
